Egg in a cloud

Recipe of Ellie!
This is a beautiful to look breakfast dish and very easy to make!
A delight for egg lovers who like runny eggs on their toast with ham and cheese.

Ingredients:
Bread slice-2,
Egg -2,
Ham -2,
Cheese slice-2,
Pre- cooked chicken ham-2,
Salt-a pinch.


Note: The slices of my home cooked brown bread were a little small for the ham,cheese and egg whites,so had to fold the ham and cheese according to the size of the slice.
For this reason I could not use all the whites.Baked the left with another toast without the egg yolk.
For making this breakfast dish,choose a big loaf of bread which have big slices.

Method:
Pre heat oven to 350 F or 180 C
Separate the egg white from the yolk and keep covered in separate bowls.
Lightly toast the bread slices.
Place the toast on a baking tray lined with butter paper.
Top each slice of bread with a slice of ham and top with a slice of cheese.(made one with cheese and ham and one with ham only).
Using a electric mixer,beat egg whites in a mixing bowl till little foamy,add a pinch of salt and then beat for 2 to 3 minutes until fluffy and stiff peaks form.

Mound egg whites attractively a top each slice of bread,forming a well in the center.
Slide the egg yolk into the center of each egg white well.
Place the tray in the oven and bake for 15 minutes until the egg whites are lightly golden and egg yolk are just set.
( egg yolk will be easy and over medium in doneness)
Remove the tray and place the toast on your plate and serve immediately.


Apple cinnamon loaf

Ingredients:
Golden delicious apple-1-peeled,cored and chopped,
All purpose flour-1 and 1/2 cup,
Brown sugar-1/3 cup,
Ground cinnamon-1tsp,
White sugar-2/3 cup,
Butter-100 gms-softened,
Egg-2,
Vanilla essence-1 and 1/2 tsp,
Baking pwd- 1 nad 3/4 tsp,
Milk-1/2 cup,
Lemon juice-1/2 tsp.


 Method:
Grease and flour a 9x5 loaf pan.
Pre heat oven to 350 F or 175 or 180 C.
Sieve flour and baking pwd together in a bowl.
Peel,core and chop the apple into small cubes.
Add 1/2 tsp of lemon juice,so that the apples do not change colour.
Mix Brown sugar and cinnamon pwd in a bowl and set aside.
Beat butter and sugar together in a bowl with an electric mixer until creamy and smooth.
Beat in one egg at a time until incorporated.
Add vanilla essence.
Add 1/2 of the flour mixture and beat for few seconds.

Pour 1/2 cup of milk and beat for few seconds.
Add the rest of the flour and beat until just combined.
Pour half the mixture into the pan and smooth the top.
Add half the chopped apples and half the brown sugar and cinnamon mixture.

Lightly pat the apple mixture into the batter.
Pour the remaining batter over the apple layer,top with remaining apples and the remaining sugar.
Lightly pat the apple into the batter .
Swirl the brown sugar mixture through apple using a finger or spoon.
Bake in the oven for 30 to 40 minutes or until tooth pick inserted in the center comes out clean.
Take out from oven and leave for 5 minutes to cool.
Run a knife around the edges of the pan.
Holding with a towel,turn the loaf upside down and take out the apple loaf from the pan.
Put back the loaf up straight and leave it to cool on wire rack.
You can enjoy the cake while still warm.Wrap the leftovers in foil or keep in a container in the fridge.

Shepherd`s pie or cottage pie


Chef John`s recipe!
Light and delicious pie!

Ingredients for minced meat:
Minced meat(lamb)-700 gms,
Olive oil-1 tbsp,
Onion-2 medium size-diced,
Plain flour-1/3 cup,
Salt to taste,
Black pepper-1 tsp,
Red chilli pwd-1/2 tsp,
Cinnamon pwd-1/4 tsp,
Dry rosemary-1/4 tsp,
Garlic-10 small or 4 big-minced or chopped,
Tomato ketchup-4 tbsp,
Carrot -1or1 cup-diced,
Frozen peas-100gms or 1 cup,
Water -1 and 1/4 cup.

Ingredients for potato topping:
Potato-700 gms-boiled,
Butter-1 tbsp,
Salt to taste,
Black pepper- 1/2 tsp,
Red chilli pwd-1/2 tsp,
Light cream or cream cheese-1/4 cup,
Milk-1/4 cup,
Cheese for pizza-combination of cheddar and mozzarella-100 gms,
Egg yolk-1.

Method: greased 7 x 11 baking dish.
Take a cooking pan add 1 tbsp of olive oil.
Add chopped onion and saute in high heat for few seconds.
Add minced or chopped garlic and saute for few seconds more.
Add minced meat and cook on high heat till it dries out and browns  a little (10 minutes).
Add flour and cook for 3 to 4 minutes on low to medium heat.


Add chopped carrots.

Add salt,pepper,red chilli pwd,cinnamon pwd,dried rosemary leaves.
Mix and add tomato ketchup.
After few seconds add 1 and 1/4 cup water.
Let it come to boil.
Put a lid on and lower the heat and cook for 6 minutes.
The consistency of minced lamb should be thick and not dry.
Add the frozen peas and close gas.
Adjust seasoning.
Mix and transfer the minced mixture to the greased baking tray.
With a wooden spoon,tap it down to make the surface smooth.
Filling:
Boil and mash the potatoes while still warm with a crusher,spoon or fingers.
Add butter,salt,pepper,red chilli pwd,1/4 cup grated cheese.

Add cream and  then mix egg yolk and milk in a bowl and then add it to the potato mixture.
Mix with a spoon for few minutes till it is creamy and smooth.
Using a tbsp put dollops of the potato mixture on the minced meat.

Spread and smooth the top evenly with a fork.
Bake the pie in a pre heated oven 375 F or 180 C for 40 to 45 minutes or till you see the edges and top is lightly brown.
Take out from oven and let it rest for 15 minutes.
Enjoy the pie with dinner roll and salad.
