Jamun cake with streusel topping


You might be surprised to know that there are no cake recipes made with jamun other then juice or  jam . So it was Anshuman's idea that I should try using jamun in desserts and  to my surprise it has turned out very well. I was a little anxious about the outcome. But I am very happy to see the result .
Ingredients :
Jamun - 500 gms with seeds - ( slice the sides and discard the seed )- use the packet jamuns as they are very healthy, juicy and clean.
All purpose flour - 130 gms ( sieved ),
Baking pwd - 1 tsp ,
Butter - 1/4 cup or 65 gms or 4 tbsp - room temperature ,
Sugar - 1/2 cup or 100 gms ( powdered ),
Egg - 1 ,
Vanilla essence - 1/2 tsp ,
Milk - 1/3 cup or 80 ml .


Streusel topping:
All purpose flour - 45 gms ( sieved ),
Sugar - 1/3 cup or 55 gms,
Ground cinnamon - 1/2 tsp,
Cold butter - 55 gms ( cut into cubes )


Method :
Pre heat oven to 350 F or 180 C for 40 minutes.
Raise the temperature to 200 C for  10 minutes.
Take a 8 in inch round or square pan .
Grease the bottom and sides and put a round parchment paper at the bottom of the pan.


Streusel:
Take a bowl, mix flour ,cinnamon pwd and sugar .
 Mix the cold cubed butter into the flour mixture with a fork or use your hands to make a coarse crumb. Keep aside in a bowl.
Sieve the flour and baking powder and keep in a bowl
Wash the jamuns and dry with a cloth.
Since the seeds are big it is not easy to take out the seeds like the cherries.
Slice the jamuns and keep in a bowl.

Take a mixer bowl and beat butter until smooth, then add the sugar till light and creamy.
Add egg and vanilla essence and beat until incorporated ( just few seconds )

Add flour mixture in three additions,
alternately with the milk mixture ( in two additions ).
Beat only till combined.
Spread the batter into the greased pan, smoothing the top with a back of a spoon.
Spread the sliced jamuns on top of the cake batter , then sprinkle the streusel topping on top.
Bake for 40 minutes then raise the temperature to 200 C for 10 minutes more or until toothpick inserted in the center comes out clean  and the top is slightly brown.
Remove from oven and leave it to cool on wire rack .
As the cake cools down  it will be easy to slice .

I have made this cake for the first time using jamun as the fruit .
It has turned out very well and delicious too .
You can use  this recipes for other fruits such as peach, plum or apricot .
