Binny's recipe
Ingredients:
Amla or Indian gooseberry- 4,
Green coriander leaves chopped - medium bunch,
Garlic clove ( small) -10,
Green chilli- 1,
Salt to taste,
Mustard oil- 1 tsp,
Water- 4 tbsp.
Method:
Wash amla and coriander leaves.
Slice the amla from the sides ,leaving the center hard part ( seed).
Discard the seed.
Wash and coarsely chop the coriander leaves with the stem.
Put coriander leaves,chopped aamla,garlic,green chilli ,salt and 4 tbsp of water in the grinder.
The paste will not be very smooth,but a little coarse.
Taste salt.
This a very easy recipe,only thing is the proportion of the amla and coriander leaves.
If you add one more amla to this recipe the chutni will be astringent in taste.
Amla fruit is sour and astringent in taste. It has high amount of Vitamin C.
Transfer the contents in a small jar.
Add 1 tsp of mustard oil.
Mix and can kept in the fridge for a week.
Enjoy this chutney with any vegetarian meal or snack.
