Hot milk sheet cake


This cake in a baked in a baking sheet tray 9x13 size so the name and the batter is blended with butter melted in hot milk!

Ingredients:

Egg -4,
Granulated sugar(powdered)-1 and 1/4 cup,
All purpose flour(sieved)-2 and 1/4 cup,
Baking powder-2 and 1/4 tsp,
Milk-1 and 1/4 cup,
Vanilla essence-1 tsp,
Butter cubed-10 tbsp or 140 gms,
Little icing sugar to sprinkle.



Method:
Pre heat oven to 350 F or 180 C
Grease a 9x13 baking sheet and spread butter paper on it with an extra one inch hanging at the short sides.
Take a small pan and heat milk and butter just until butter is melted.

Close gas.
Sieve and combine flour and baking pwd in a bowl.

In a large bowl,beat eggs on high speed for 5 minutes.
The egg will turn lemon coloured and will fall like ribbon from the beater.
Gradually add sugar and keep on beating until mixture is light and fluffy (one minutes).
Beat in the vanilla essence.
Gradually add the flour mixture in 3 or 4 batches in low speed until smooth.Remove the beater.

Pour the hot milk and butter in another bowl.
With a spatulla scoop out a little batter and mix with the hot butter milk.
Use a whisk to blend both.
We can not blend both the mixture together as the milk is hot.
So by mixing a little of the batter we bring the temperature down of the milk.
Use the batter once more and mix lightly with a whisk.
Once batter is mixed,pour the whole mixture to the batter and lightly whisk the whole batter together until smooth.
Pour the batter on the tray and even the top and fill the corners.
Give a little tap on the counter to remove any bubbles.
Bake the sheet cake in a pre- heated oven for 35 to 40 minutes or until tooth pick inserted in the center comes out clean.
You can start checking after 35 minutes.
The edges and top will start to brown a little.
Remove from oven and let it cool on wire rack for 5 minutes.
Hold the sides of the butter paper which are hanging from the sides and gently lift it and slide the tray from the wire rack.
Let the cake cool on wire rack for 15 to 20 minutes.
Place the cake on a cutting board and slice the cake into 16 pieces or any size of your choice.

On serving sprinkle icing sugar through a tea strainer.
Enjoy the hot milk cake with tea.
It taste good while still  warm.
