Rava Dosa


Rava dosa is an instant dosa!It does not require fermentation.
It is made with semolina or suji!
Since the batter is spiced,the dosa can be had with just chutney only!

Ingredients:(6 rava dosa)
Fine rava or suji or semolina-1/2 cup,
Rice pwd-1/4 cup,
Maida or all purpose flour-1/4 cup,
Cumin seeds-1/2 tsp,
Salt-1/2 tsp,
Ginger shredded or paste-1 inch or 3/4tsp,
Green chilli-2-minced,
Hing-a pinch or 1/4 tsp,
Green coriander leaves-2 tbsp,
Water-2 cup.


Note:There are few things you will have to keep in mind while making rava dosa.
Rava dosa takes few minutes longer to cook then normal dosa.
In normal dosa,you pour batter in the center and then spread it around with a katori or laddle,but in rava dosa,the batter is poured around the edges first and then in the center.
You do not use a katori to spread the batter.Since the batter is thin,it flows itself.
You cannot pour all the batter in one go,but 1/4 cup ladle at a time,around the edges first,then in the center.

Method:(Makes 6 rava dosa)
Sieve suji or semolina and keep in a bowl,add flour,rice pwd,salt,cumin seeds,ginger paste or shredded,green chilli minced,hing and water.
Mix with wire whisk and cover with a lid or plate. 
Leave it for 1/2 hour.
Sprinkle chopped coriander leaves and mix with a laddle.
The batter consistency will be like butter milk.
Heat the dosa tawa and pour few drops oil in it.
Spread the oil with half cut onion.
Once the tawa is heated,lower the heat to medium and start pouring the batter around the edges and then in the center,/1/4 cup ladle at a time.
Raise the heat,and as the batter dries up,pour few tsp of oil all around.
Let it cook till you see the edges brown.
With a flat spatula,loosen and lift the sides and then gradually the center.
Flip the dosa and let it cook  for few seconds.
Flip back again and then fold the dosa.
Take out in a plate.
Before pouring the batter for the next dosa,stir with a laddle to evenly mix.
Once four dosas are made the batter thickens,so add 1/4 water more.
Mix and make the remaining two dosas.
This is a quick dosa and can be made in a short time.
