Apple streusel cake



This cake is very delicious.The bottom is the cake layer,spread with slices of tart apples and then the top layers has the streusel which is a mixture of brown sugar,nuts,cinnamon pwd,butter and flour.

Ingredients for streusel
All purpose flour-1/3 cup,
Brown sugar-3 tbsp,
Cinnamon pwd-3/4 tsp,
Cold butter-3 tbsp-cut into small pieces,
Almonds-1/4 cup-you can use walnuts.
Ingredients for the cake.
All purpose flour-1 cup,
Baking pwd-1 tsp,
Butter-55 gms or 1/4 cup-room temperature,
white sugar-little less then 1/2 cup,
Egg -1,
Vanilla essence-1/2tsp,
Milk-1/3 cup,
Golden delicious or green apples(tart apples)-2-peeled,cored and cut into thin -1/8 inch slices.


Method: streusel topping-
In a bowl mix together,flour,sugar,ground cinnamon,nuts and cold butter.
Mix with your fingers to resemble a coarse crumbs.


Keep it in the fridge while you make the cake preparation.
This streusel mixture can be made ahead of time and kept in  the fridge to save time.
Cake batter-
Grease and flour an 8 inch springform and keep aside.
Pre heat oven to 180 C or 350 F.
Take a bowl and sieve together flour and baking pwd.
Mix with wire whisk.
Using a beater,beat butter for few seconds till creamy.

Add sugar and beat for 30 seconds or till light and fluffy.
Add egg and beat for 30 seconds.

Add vanilla essence and beat for few seconds.

Add the flour alternately in three additions with the milk in two addition and beat until just combined.

Spread the batter onto the bottom of the pan,smoothing the top with a knife.

Evenly arrange the apple slices on top of the cake batter.

Sprinkle the streusel topping on top.

Bake for 45 minutes or until toothpick inserted in the center comes out clean.

Remove from oven and place on wire rack.
After 5 minutes,unlock the sides of the springform and let it cool completely on wire rack.


Slice the cake and enjoy while still a little warm.

Leftovers can be kept in the fridge.

Makes 8 to 10 servings.
