Onion - 1 chopped ,
Ginger - 1 inch - chopped ,
Garlic - 5 to 6 chopped ,
Green chilli - 3 chopped ,
Nutmeg - 1/4 tsp ,
Oil - 1tsp ,
Salt to taste .
Ingredients for vegetables :
Tomatoes - 2 chopped ,
Cauliflower - 1 cup or 5 -6 florets cut into small pieces and blanched ,
Carrot -1 chopped and blanched ,
Green beans - 10 - chopped and blanched ,
Cumin seeds - 1tsp ,
Red chilli pwd - 3/4 tsp ,
Garam masala pwd - 1 tsp ,
Salt to taste ,
Oil - 1 tsp .
Method :
Heat a non stick pan and put the chopped onions in it .Add 1/4 tsp of salt .
Saute the onions in high heat till it is slightly caramalised .
Transfer to a plate .
In the same pan ,add 1 tbsp of oil and then as oil heats up add chopped ginger ,garlic and green chillies.
After few seconds add the palak puree .
Mix and sprinkle nutmeg pwd and salt .
Add the caramalised onions to the palak puree .
Mix and then,
lower the heat and let it cook for 2 minutes and then close gas .
Meanwhile heat another pan and add 1 tsp of oil.
Add 1 tsp of cumin seeds .
As cumin changes colour add the chopped tomatoes .
Lower the heat and let the tomatoes cook .
Add salt .
After 2 minutes the tomatoes will be tender .
Raise the heat and then add cauliflower ,carrots and green beans .
Toss the vegetables .
Sprinkle red chilli pwd and garam masala pwd .
Lower the heat and cover for 2 minutes .
Check the tenderness of the vegetables and taste salt .
Sprinkle green corriander leaves .
Close gas .
Take a serving plate and spread the cooked palak on it forming a base for the cooked vegetables .
Spread the cooked hot vegetables on the bed of palak .
Palak bahar is ready .
Enjoy the dish with hot roti .
