Sitafal ya konhada ( Pumpkin )

Ingredients :
Sitafal ya konhada - 400 gms ( skinned and cubed ),
Panchforan - 1/2 tsp ,
Dried red chilli -1 ,
Jaggery -1 tsp ( crushed ),
Turmeric pwd -1/4 tsp ,
Red chilli pwd -1/4 tsp ,
Amchoor pwd - 1/2 tsp ,
Salt to taste ,
oil -2 tsp .


Method :
Discard the hard skin and cut into  1 inch cubes .
Heat oil in pan ,add panchforan and dried red chilli .
As the spices crackle ,lower the heat and add the cut vegetable .
Add all the above ingredients  and cover with a lid for 10 minutes .
The vegetable has to be cooked in low heat .Stir in between .
Check if the vegetable has softened . If done uncover and raise the heat .Use  the spatulla  to mix and crush the pumpkin so that the spices are evenly coated .Dry if there is any vapour .
Konhada or sitafal is ready .
Sitafal is called konhada in Bihar .
Can be had with rice or puri .

Kaddu ( Pumpkin )

Ingredients :
Kaddu or lauki - 400 gms ,
Garlic -6 Small ,
Red dried chilli -1 ,
Mustard seeds -1/2 tsp .
Methi seeds -1/4 tsp ,
Turmeric pwd - 1/4 tsp ,
Salt - 1/2 tsp ,
oil -1 tsp .


Method :
Peel lauki and cut into small 1 inch size .
Heat oil in cooker ,add red chilli ,methi .and mustard seeds  .
As the spices crackle add kaddu ,turmeric pwd and salt .
Mix and add 2 tbsp of water and close the cooker .
Raise the heat - one whisle on high heat  and 2 minutes on low heat .
Open the cooker when it is cold and dry the lauki water on high heat .
 If you want it to be more spicy you can add tomatoes ,chopped coriander leaves and slit green chillies
in the cooker before you close the lid to boil the lauki .
