This is a one bowl recipe,where all the ingredients are just mixed in a bowl for 30 seconds and then transferred to a baking dish to bake!
Made with using oil, curd, fresh lemon juice and zest makes the brownies a delight to eat.
The texture is soft and moist!
Ingredients:
All purpose flour or maida (sifted) -1 cup,
Sugar-3/4 cup,
Salt-1/4 tsp,
Egg-2,
Baking soda-1/2 tsp,
Beaten curd-1/4 cup,
Canola oil or any flavour less oil-3 tbsp,
Fresh lemon juice-2 tbsp,
Lemon zest-1 tbsp.
Lemon glaze:
Icing sugar (sifted)-1/2 to 3/4 cup,
Lemon juice-1 to 1 and 1/2 tbsp,
Zest of one lemon.
Method:
Line a square baking tray with foil,with the sides hanging,so that the brownies can be lifted once they are baked..Grease the bottom and sides with oil.
Pre heat oven to 350 F or 180 C
Take a bowl and mix flour,salt,baking soda,egg,curd,oil,lemon juice,sugar and lemon zest.
Using a wire whisk or a spatula mix and then beat for 30 seconds for the mixture to become smooth.
Pour the batter in the baking tray.
With the flat spatula fill the sides and even the batter.
Transfer the baking tray to bake for 20 minutes.
Toothpick inserted in the centre will come out clean.
Keep on wire rack.
Make pricks with a fork for the lemon glaze to seep in.
While the brownie is still hot pour the glaze over the baked cake.
Spread the glaze all around.
Prepare the glaze only once the cake comes out from the oven.
Lift the lemon brownies from the tray by holding the foil.
Leave it to cool on wire rack.
Cut into squares and enjoy the lemonies!
Take 3/4 cup of sifted icing sugar in a bowl and pour one tbsp of lemon juice and lemon zest.
The glaze will be a little stiff.
Add 1/2 tbsp of lemon juice more and then the glaze will be of pouring consistency.
