Poppy Seeds Muffins


Ingredients:
All purpose flour- 2 cups,
Roasted poppy seeds - 1tbsp,
Baking soda- 1/2 tsp,
Salted butter- 1/2 cup or 113 gms,
White sugar ( powdered )- 1 cup,
Eggs -2,
Zest of 2 small lemon,
Yogurt - 1 cup.

Lemon glaze:
Icing sugar- 1/2 cup,
Lemon juice- 2 tbsp.

Method:
Pre heat oven to 400 F or 205 C
Line muffin pans with paper cups.
In a bowl whisk flour,cooled roasted poppy seeds,and baking soda.
In bowl of your mixer ,beat butter for few seconds till smooth.
Add sugar and beat until light and fluffy.
Beat in the eggs one at a time,beating well after each addition.

Scrape down the sides of the bowl as needed.
Beat in the lemon zest,yogurt and vanilla until well blended.
Stir in the flour mixture just until moistened.
Do not over mix.
Spoon the batter into the muffin cups using 2 spoons or ice cream scooper.
Bake for 18 to 20 minutes or until a toothpick inserted comes out clean.
Remove from oven and place on a wire rack to cool for 5 minutes before removing from the pan.
Lemon Glaze:
Place the sugar in a small bowl and stir in the lemon juice.
While the muffins are still warm,drizzle the top with the glaze.

Makes 16 muffins.
