Strawberry-Banana Muffins

  Ingredients:
Strawberry - 1 cup ( 240 ml) or 250 gms - cut into small size pieces)
All purpose flour or maida ( sifted ) - 2 and 1/2 cup,
Light brown sugar- 1 cup to 3/4 cup -tightly packed,
Baking pwd- 1 and 1/2 tsp,
Baking soda- 1/4 tsp,
Ground cinnamon- 1 tsp,
Ripe bananas- 2 ( banana with black spots ),
Butter melted- 1/2 cup or 113 gms,
Eggs -2 ( lightly beaten),
Vanilla essence- 1 tsp.

Method:
Pre heat oven to 350 F or 180 c.
Line 2 baking muffin tray with paper cups.
You just need 2 bowls for making these muffins.

Melt the butter in microwave or saucepan.
In a medium size bowl mash the bananas ( you can then to small chunks).
Add the beaten egg,vanilla essence and the melted butter and stir to combine.

In another large bowl combine the sifted flour,sugar,baking pwd,baking soda and cinnamon.
Mix all with wire whisk so that all the ingredients are combined.
Gently fold in the strawberries,making sure they are coated with flour.
(This helps to prevent the berries from sinking around during baking)
Add the wet ingredients to the dry ingredients and stir only until the ingredients are just combined ( use a flat spatulla to combine ).
Divide the batter evenly among 18 muffin cups using two spoons or an icecream scoop.
Bake for 25 to 30 minutes or until toothpick inserted in the center comes out clean.
Transfer to wire rack to cool .
Best eaten the day it is made but can be stored for few days in the fridge.
Makes 18 muffins.
