Ingredients for Litti :
Wheat flour or atta - 1 and 1/2 cup -!50 gms,( 6 littis ),
Ajwain or carom seeds -1/4 tsp,
Mangrella or onion seeds - 1/4 tsp ,
Salt -1/2 tsp ,
Yogurt -1/2 cup.
Water 1/4 cup ( to knead ),
Ingredients for the fillings :
Roasted gram flour or sattu - 1 cup ,
Onion -1( small , finely chopped ),
Green chilli -2 ( chopped ),
Lemon -1 ,
Garlic -4 ( chopped ),
Ginger -1 inch ( chopped ),
Coriander leaves - 1 tbsp ( chopped ),
Ajwain or carom seeds - 1/4 tsp ,
Onion seeds - 1/4 tsp,
Mustard oil - 1 tbsp,
Salt to taste ,
Water -3 or 4 tbsp .
Method :
Knead the flour with ajwain, mangrella ,salt , curd and make a stiff dough . Cover and keep aside .
Take a bowl and put 1 cup sattu ,chopped onion,green chilli ,garlic,ginger ,ajwain,mangrella ,juice of one lemon ,coriander leaves and salt .Mix together and add 1 tbsp of mustard oil .Add 3 or 4 tbsp of water and make a moist mixture .Not too dry nor wet .
Take the atta dough and divide into six equal parts .Make round balls .Dust it with wheat flour and fill each ball with the sattu mixture .
Pre heat oven to 375 F or 190 C .
Spread foil on your tray and grease it with ghee .Put the round dumplings on the tray and roast it for 40 minutes .After 30 minutes when you see brown spots on littis turn it upside down so that it is evenly roasted.Switch off the oven and let it stay for 5 minutes .
Take out the littis and let it cool for 5 to 10 minutes and then pour 1 tsp ghee on each littis and enjoy with tomato eggplant chokha .
Makes 6 littis.
Tomato eggplant chokha
Ingredients :
Eggplant or baigan ( round ) -1 ,
Tomato -2 ,
Garlic -4 (chopped ),
Onion - 1 ( small ,finely chopped ),
Green chilli -2 ( finely chopped ),
Green coriander leaves -1 tbsp ,
Mustard oil -1 tbsp .
Salt to taste .
Method :
Roast the eggplant and tomatoes on gas .
When roasted ,leave it to cool .
Peel the burnt skin of the eggplant and discard the stem and the seeds .
Mash it and keep in a plate .
Slice off the top or hard part of tomato and peel off the skin .Mash it and mix it with the mashed eggplant .
Add chopped garlic ,chopped onion ,green chilli and salt .
Pour 1 tbsp of mustard oil .
Mix .
Eggplant tomato chokha is ready .
Enjoy litti chokha with coriander chutney ,pickle and .
