Spanakopita ( greek spinach pie )

Ingredients :
Spinach or palak- 900 gms,
Feta cheese -100 gms ( crumbled ),
Egg -1 ,
Spring onion - 100 gms ( chopped ),
Coriander leaves or parsley whatever is available -1 tbsp ( chopped ).
Pepper pwd  -1/4 ,
Olive oil -1/2 cup,
Phyllo sheets -4 .
Method :
Discard the thick stems of spinach .
Blanch  them in hot water for 2 minutes . Refresh with cold water and allow to drain .
Squeeze the excess water from the spinach by pressing it firmly between the  palms .
Place the spinach in a large bowl together with egg, feta cheese ,spring onions and freshly grounded pepper . Mix well .
Brush the oven proof dish with olive oil . (  dish size is 6 1/2 x6 1/2 inches )
Spread one sheet of phyllo sheet, allowing to hang over the sides  .Brush the sheets in  the inside of the dish with olive oil .
Spread one  more sheet in the same way and brush it with oil and then spread half  of spinach  feta mix and then cover with the phyllo sheet  and brush it with oil  .
 Spread the rest of spinach mix and  cover with a sheet and oil it . Fold the  hanging sheets  from all sides and evenly brush the top and sides with olive oil .
Preheat the oven to 190 C or 350 F .
Cooking time is 45 minutes or till a light brown  crust forms .
Take out from oven and leave it to cool for half hour .

Cut into squares or rectangles .
Makes 6 pieces .Each piece is 2x 3 inches size .
Can be warmed in the oven before serving .
Eaten as a side dish or appetizer .
