Ingredients :
Pasta - 4 cups ,
Basil pesto sauce - 3/4 cup,
Boneless chicken breasts - 2 - poached and shredded ,
Broccoli - 1 medium size - cut into small florets,
Green beans - 100 gms - chopped into small size ,
Garlic cloves - 6 small size or 2 big - chopped ,
Olive oil 2 tbsp,
Pasta seasoning - 1/4 tsp,
Chilli flakes - a pinch,
Salt and pepper ,
Parmesan cheese and basil leaves for topping ( optional ).
Method :
You can use any pasta of your choice .
Follow the instruction of the boiling time of pasta .
Add 1/2 tsp of salt to the boiling water .
I have used Calavita pasta and it took me 10 to 12 minutes to cook.
Do not rinse the boiled pasta with cold water after boiling.
Add few drop of olive oil so that the pasta do not stick with each other .
Poaching of chicken breasts :
Heat water in pan and as it comes to boil ,lower the heat and add the chicken breasts .
Cover and let it simmer for 15 minutes .
Close gas and let it remain in hot water for another 5 minutes.
Take out the chicken pieces and slice with a knife to check if the chicken is cooked from inside.
The chicken should be white and juices should be clear and runny .
If you see pink inside , then cook the chicken for few more minutes .
If you cook for too long then chicken will be hard.
Once the chicken is poached ,slice it into half .
Take two forks and use one fork to hold the chicken with your left hand and with use the other fork to shredd the chicken into pieces.
You can use your fingers to shredd the chicken.
Keep aside the shredded chicken in a bowl.
Vegetables :
Heat pan and add 1 tbsp of olive oil.
Add chopped garlic.
As garlic turns light brown after 30 seconds, add the broccoli florets .
Stir the florets for few minutes in medium heat .
Add the chopped beans .
Add salt , pepper ,pasta seasoning and chilli flakes .
Cover with a lid for 3 to 4 minutes till the broccoli florets are cooked .
Add the pesto sauce and shredded chicken and stir until the vegetables are evenly coated.
Toss in the pasta .
Close gas .
Mix well till all the ingredients are evenly coated.
Taste seasoning.
You can enjoy this lovely green colour pasta warm or cold.
Sprinkle some grated parmesan cheese and basil leaves .
