All purpose flour - 2 1/2 cups or 400 gms ,
Semolina or suji - 1 cup or 100 gms,
Fleischmann's active dry yeast - 1 tsp or 1 packet ( 7 gms)active dry yeast ,
Caster sugar or powdered sugar - 1/2 tbsp,
Olive oil 2 tbsp,
Luke warm water - 1 and 1/4 cup.
Method:
Warm water in microwave for 30 seconds in a cup and add dry yeast.
Stir and leave it for 10 minutes.
You will see bubbles and foam forming at top ,then add 2 tbsp of olive oil .
Sieve flour , semolina and salt in a bowl and mix it properly.
Make a well in the center of the flour and pour the yeast mixture in it .
With a fork make circular motion and bring the flour gradually from the sides and swirl it into the liquid.
Keep mixing and drawing layer amount of flour in and when it starts to come together , transfer the contents on to your counter and work the rest of the flour with your dusted hand .
Since my flour was not too wet, I did not need any extra flour for dusting but had to add 1 to 2 tbsp of warm water to the dough to make it smooth and springy ( 10 minutes kneading ).
Take a large bowl and grease it with olive oil and put the dough in it and then turn it upside so that the dough ball is evenly coated with oil.
Cover with a damp cloth and leave it in warm place for an hour for the dough to rise ( double in size - the best place is oven ).
when the dough has risen ,make a few punches to knock the air out of the dough.
Now remove the dough to a flour dusted surface and divide the dough according to your pizza size .
I have divided my dough into 2 and then divided one half again for 2 pizzas and left one whole half for calzone.The same dough is required to make calzone.
or wrap it immediately with cling film and put it in the fridge if you do not plan to make it immediately. You can not leave the dough for too long. You can divide the dough and wrap it with cling film and put it in the fridge. When you plan to make it, let it rest for 15 minutes at room temperature with the cling film on and then roll it.
Ingredients for tomato sauce :
Red ripe tomatoes - 1 kg- chopped
Garlic - 4 to 6 finely sliced ,
Olive oil - 1 tbsp,
Fresh basil leaves - 8 to 10,
Salt and pepper ,
Chilli flakes - a pinch
Oregano- sprinkle .
Method:
Heat pan on low medium heat and as it heats up add 1 tbsp of oil.
Add the finely sliced garlic and as it turns slightly brown,add the basil leaves .
Add the chopped tomatoes ,salt and a large pinch of pepper .
Cook for 20 minutes in low heat so that the tomatoes become soft .
With a wooden spoon mash the tomatoes so that the sauce becomes smooth and thick.
Sprinkle chilli flakes and oregano.
You can sieve the sauce if you like a smooth paste consistency .If you think the sauce is too thin after sieving ,then put on heat again till your sauce is thick.
I have not sieved as I liked it with the skin on .
Taste seasoning when done .
Topping:
Pineapple,
Chicken franks ,
Mozzarella cheese,
Yellow bell peppers,
Onion rings,
olive oil ,
Oregano,
Olives and jalapenoes,
Pepper pwd,
Basil leaves.
Assemble :
If you plan to make it right away .Take a knife and divide the dough into 4 parts .
This amount of dough is enough to make 3 to 4 medium size pizzas.
Make round ball and pinch the dough if there are any open sides and wrap with cling film and leave it on a greased tray for 15 minutes for the dough to rest .
This will make it easier to roll out thinly.
Sprinkle some flour or bread crumbs on the surface if you are using a screen and roll out the dough according to your pan or screen size with your rolling pin.
With a fork make pricks. It will not allow the pizza dough to puff up while baking.
Place the toppings .It can be of your choice .
I have used yellow bell peppers ,onion rings ,sliced chicken frank sausages and pineapples cubes. Top it with torn slices of mozzarella cheese .
Sprinkling of fresh pepper , oregano ,chilli flakes , fresh basil ribbons and few drops of olive oil.
I have not sprinkled salt as there is enough salt in tomato sauce ,sauasges and cheese .
You can sprinkle if required .
Once the topping is done transfer the pizza to pre heated oven of 250 C in the bottom rack , the oven should be heated for half hour before your pizza goes inside for baking .
Bake for 10 to 15 minutes or till the crusts are golden brown .
Baking time depends on the thinness of the crust .
If the crust is thin, then 7 to 10 minutes is required .
Remove from oven and sprinkle sliced olives , jalapenoes ,oregano and ribbons of basil leaves.
Salt and pepper if required.
Slice with a pizza cutter and enjoy while still hot .
