Osmania Biscuits


This is the recipe of Vahchef!

It is a soft tea biscuit,gets its name after the last ruler of Hyderabad,Mir Osman Ali khan!
Made the biscuit on request of Sab gul!

Ingredients:
All purpose flour ( sifted )-200 gms,
Salted butter-120 gms-room temperature,
Icing sugar ( sifted )-80 gms,
Baking pwd-1/4 tsp,
Cardamom pwd-1/2 tsp,
Custard pwd-10 gms or 2 tsp,
Milk pwd-10 gms,
Milk-20 ml,
Saffron -a pinch soaked in 1/4 cup of milk.


Note: In baking, always sift the flour first and then measure it.

Method:
You can do the mixing in a bowl or a electric mixer.I have used a mixer!
Take a bowl and put the sifted four and add custard pwd,milk pwd,cardamom pwd and baking pwd through a strainer.
With a wire whisk mix all the ingredient and keep aside.
Take a bowl and put the butter in it.
Run the mixer for few seconds and then add the icing sugar.
Beat for a minute.
Add milk.
Beat again for few seconds or till the milk is completely mixed with the sugar butter mix.
Add the flour mixer and run the blender till you do not see any white of the flour in the dough.
Remove the blade.
Gather the dough into a ball.
Cover with a cling film and keep in the fridge with the bowl  for 30 minutes for the dough to firm up.

Pre heat oven to 350 F or 180 C
Line butter paper on your baking trays.
Sprinkle little flour on the counter and put the dough ball in the center.
Spread the same cling film on the dough and with a rolling pin,role the dough to 1/4 inch thickness.
Do not worry if the edges are breaking.
I have used 2 and 1/4 inch round cutter.You can use any shape cutter.
Remove the cling film and dip the edge of the cutter in plain flour and make round cuts.
Place the biscuits on the tray leaving an inch space between two biscuits.
Brush the biscuits with saffron milk.
Bake the biscuits for 15 minutes in the oven.
The biscuits will be brown at the edge and bottom.
Leave it to cool on wire rack for 10 minutes.
Remove from butter paper and leave it to cool on wire rack.
Gather all the scraps and make it into a ball and cover with the cling film and roll again.
Repeat the same process again.
You can put the unbaked biscuits in the tray and cover it or keep in the fridge if the weather is hot and humid.
Do not brush with milk.
Just before baking,brush with saffron milk.
Makes 28 biscuits.
Keep in air tight container at room temperature.

Enjoy these cardamom flavoured biscuits with hot tea.
