Ajwain cookies

These cookies are delicious and mild in taste.

Ingredients:
All purpose flour-2 cups,
Salted butter-125 gms,
Sugar (powdered)-1/4 cup,
Milk-1/4 cup,
Ajwain or carom seeds-1 tsp,
Salt-1/4 tsp.

Note-you can use ghee or oil instead of butter, but then increase the salt.

Method:
Sieve flour and measure 2 cups of flour in a bowl.
Add salt and ajwain seeds.

Mix and then add the powdered sugar.

Add melted butter.

Mix and you will get a coarse meal texture.

Gradually add milk, two tbsp at a time as the dough should not be very soft but a little hard, like a puri dough.

Do not knead the dough too much, but just gather it to form a ball.

Cover and leave it for 10 minutes to rest.
Pre heat oven to 180C for 10 minutes.
Take a baking tray and line it with butter paper.
Divide the dough into half.

Sprinkle some flour on the counter and roll one half of dough.

Dip the cutter in the flour as it will be easy to cut and will not stick.

Cut out the cookies using any cutter of your choice.

Place the cutout cookies in the the baking tray.

Gather the scraps into a ball and roll again to cut out more cookies.
Since no baking powder or soda is being used, the cookies will not expand much.
Bake the cookies for 20 minutes or until you see the edges brown.

Once the cookies are baked, cool for 5 minutes.

Remove the tray and place the cookies on wire rack to cool to room temperature.
Keep in a airtight container.
Makes 40 cookies.
