Mattar Kachori

Ingredients for dough :
All purpose flour - 1 cup ,
Oil - 2 tbsp ,
Salt 1/4 tsp ,
Baking soda - a pinch ,
Chilled water - 1/2 cup .

Ingredients for filling :
Frozen green peas or fresh peas  - 1 cup ( parboil the peas if they are not fresh ),
Oil - 1tsp ,
Corriander pwd - 1 tbsp ,
Fennel seeds or pwd - 1 tsp ,
Red chilli pwd - 1/2 tsp ,
Chilli flakes - 1/2 tsp 
Mango pwd - 1/2 tsp .

Method :
Heat oil in a non stick pan .
Add green peas ,salt ,fennel seeds or pwd ,chilli flakes ,corriander  pwd ,mango pwd and red chilli pwd .
Mix and cover for 5 minutes .
Lower the heat and let the peas soften .
Remove the lid and check if peas are soft if not cover till the peas are 3/4 cooked .
Raise the heat and stir fry the peas for  a  minute crushing the peas along .
Close the gas and transfer  the contents to a plate to cool .You can crush the peas if not done in heat.

Make the dough for filling -

Take a bowl and put flour ,salt ,baking soda and  oil in it .
Mix and gradually add water to it .
Knead the dough and cover  with a damp cloth for 15 minutes .
Knead the dough again after 15 minutes .
Divide the dough into 7  or 8 golf size balls .
With a rolling pin roll each ball into 2 inch diameter and then spoon the pea mixture in the center .Close the sides up .
Seam side up press and flatten the ball . Press lightly with the edge of  your palm the flattened balls into 2 inch size .
Cover with a damp cloth  for 5 minutes .
Heat oil in pan and as oil heats up lower the heat and put the kachoris in oil.
Let it fry in low heat for 4 minutes or till the kachoris are evenly browned .
Take out in a plate and let it cool for 5 minutes .
These kachoris dont require any sauce .
Enjoy the kachoris after it has cooled down .
