Rabri


Ingredients:
Full cream milk - 1/2 litre ,
Sugar - 1tbsp ,
green cardamom pwd - 1/2 tsp ,
Pistachio and almonds - 4 each ( slivered ).


Method :
Take a heavy bottom or a non stick pan and  pour milk in it .
Let the milk come to a boiling point ,then reduce the heat and let it boil in simmer for 20 minutes .Keep stirring from time to time .
The milk will be reduced to 1/3 .
Raise the heat to medium  and keep stirring till the milk thicken and then add sugar ,nuts and cardamom pwd .( keep some nuts and cardamom pwd  for garnishing )
Scrape from the sides and  spoon or stirring ladle .
Close the gas  when sugar is dissolved .
Leave it for 5 minutes in the pan,  milk  will thicken as it cools and then transfer  to a serving bowl .
Sprinkle the remaining nuts and cardamom pwd .
Rabri can be had with jalebi ,malpua or gulabjamun .
It goes very well with hot parathas too .
Makes one small bowl .
