Custard cake

This cake is a little different then any other cake.The batter is very liquid and once baked,it forms three layers.Soft and spongy at the bottom,center has a thin layer and the top layer has the  texture of a cake.Amazing:)


Ingredients:
Eggs-4,
White granulated sugar(powdered)-150 gms or 1 cup,
Vanilla essence-1 tsp,
Warm water-1 tbsp,
Butter melted-110 gms or 1/2 stick,
All purpose flour or maida(sieved)-120 gms or 1 cup,
Milk-480 ml or little less then 2 cups-( 500ml is 2cups)
Orange zest-1,
Lemon juice-1/4 tsp.


Note:Separate the eggs when they are cold.
You can use the zest of orange or lemon.
For orange zest use the imported oranges as the Indian oranges are loose skinned.
For beating egg whites the bowl and beater should not be greasy,if there is any grease the whites will not form stiff peaks.

Method:
Pre heat oven to 160 C
Line a 8 inch pan with butter paper or grease the pan with butter.
Separate the egg whites from egg yolk and keep in separate bowls.
Put the egg whites in a clean bowl and beat for few seconds till foamy.
Add 1/4 tsp of lemon juice and beat in high speed till you get stiff peaks (2 to 3 minutes).
With the same beater,beat the egg yolks for few seconds.
Add sugar and  1 tbsp of warm water and beat for 2 minutes or till light.
Add vanilla essence.
Beat for few seconds.
Add the melted butter and orange zest.
Beat till mixed.
Add the flour and beat till combined.


Stir in the milk and beat only for few seconds.
Since the quantity of milk is more,you will not be able to beat much as it will spill out.
Remove the beater from the handle.
You can mix lightly with the whisk or beater.
Do not be alarmed as the batter is thin.
Gently fold in the egg white in two batches until evenly combined.
Pour the batter in the pan and bake for 50 minutes or until the top is golden brown and puffed and the middle is set.
Let it cool on wire rack for 4 to 5 hours.
The custard has to set, so for best result keep the cake in the fridge for few hours to set.
Cover and keep it the fridge.( I had to keep it over night as it was evening and  needed light to take pictures)
Loosen the cake from the sides with a knife and lift the cake from the pan.
Slice the cake using a pizza cutter or a sharp knife.
Sprinkle icing sugar on top.
I have served the cake with caramelized apple slices.

    1. Thanks for liking the recipe!
      Thinly cut apple slices were cooked in hot caramel sauce for few minutes to make it soft and then used it as a glaze or topping.
      Caramel sauce is made with sugar,water,cream,Butter and vanilla essence.
