Shortbread vanilla biscuits


Very crisp and buttery biscuits! easy and quick to make!
Recipe of Vahchef!

Ingredients:
Plain flour or maida-240 gms or 2 and 1/4 cup,
Icing sugar-85 gms,
Butter-170 gms- (I have used regular and light butter),
Milk pwd-2 tbsp,
Baking pwd-1/4 tsp or a pinch,
Vanilla essence-2 tsp.


Method:( you can do the mixing in a bowl with a wooden spoon or mix with an electric beater)I have used an electric beater.
Sieve together flour,baking pwd and milk pwd in a bowl.
Sieve icing sugar in a small bowl to remove lumps.
Pre heat oven to 180 C
Line 2 baking tray with butter paper.
In a mixing bowl,cream butter for few seconds and then add icing sugar.
Run the beater for 1 minute.

Scrap the sides and add 2 tsp of vanilla essence.
Beat for few seconds,then add the flour.

Run the beater till all the flour is incorporated.
The mixture will not form a dough since there is no milk or water added.
Gather the mixture in the center and knead lightly.
Transfer to a lightly floured counter.
Lightly pat the dough to form a smooth ball.
Flatten it into a square and put a cling film on top and roll with your rolling pin.
Flatten the dough into 7 x 10 inch or 1/4 inch thickness.
Cut out the rough edges to form a straight line.
Using a pizza cutter,cut the dough into rectangular shape.(cut 1 inch width strip then cut across horizontally into 3 inch length strip).
Using a fork,lightly prick holes on each uncooked biscuit.
Using a wide spatula or wide blade knife lift the cutout biscuits onto the tray leaving out 1 inch space in between each biscuit.
Sprinkle granulated sugar on top of each biscuit.
Gather the left over scrap and roll again and repeat the method.
Bake for 15 minutes or until the edges are lightly brown.
Take out on wire rack to cool for 5 minutes.
Remove the tray and transfer the biscuits on wire rack to cool.
After 2 or 3 minutes remove the butter paper and let the biscuits cool completely on wire rack.
Enjoy the fresh biscuits any time of the day.
Store in a container.
Makes 27 biscuits.
