Favourite cookies of the children,but these home baked cookies will loved by the adults too:)
Ingredients:
All purpose flour or maida-200 gms-sieved,
Salted butter-100 gms,
Icing sugar-70 gms-sieved as there will be lumps in it,
Vanilla essence-1 tsp,
Water-2 to 3 tbsp.
Method:( Mixing and beating can be done in a bowl with a wooden spoon or with an electric beater).I have used an electric beater for making these cookies.
Pre heat oven to 180 C or 350 F
Line 2 baking tray with butter paper.
Take a bowl and beat butter till smooth for few seconds.
Add icing sugar and beat for a minute till smooth and creamy.
Add vanilla essence.
Beat for few seconds.
Add 2 tbsp of water.
Mix and add the flour.
Mix only for few seconds, till you see no flour.
Remove the beater,and gather the flour in the center of the bowl.
If the flour is too stiff,can add 1/2 tbsp of water,the dough should clamp together in your fist,when you hold it.
Transfer the dough on the counter lightly floured with flour.
Gather into a ball.
Cover with a cling film and using a rolling pin roll the dough into 1/4 inch thickness.( not very thin nor very thick)
You will need 2 cutters-2 inch width for the lower cookie,and 1 inch width for the top cookie.
You can cut according to your own size.
Using 2 inch cutter cut out cookies and place them on the butter paper.
Cut out the same no of cookies and using 1 inch cutter,cut in the center and place them on the butter paper.
Bake the cookies in a pre heated oven for 15 minutes.
Remove from the oven and place them on wire rack for 2 minutes.
Remove the tray and let the cookies cool on the butter paper for few minutes.
Remove the cookies from the butter paper and let it cool on wire rack.
Gather the scraps into a ball and roll again and cut out the cookies.
Bake all the cookies and leave it to cool completely.
Once the cookies are at room temperature.
Place 1/2 tsp of your favourite jam in the center of the whole cookie.
Place the center cut out cookie on the jam.
You can enjoy the Jim Jam right away or store in the fridge for sometime for the jam to firm up a little.
You need not put jam in all the cookies.
The cookies can be kept in a container and you can spoon jam between two cookies and enjoy!
