Samosa ( Potato Fillings)

Ingredients for stuffing :
Boiled potatoes -6 -500gms ,( slightly mashed )
Cumin seeds -1tsp ,
Turmeric pwd - 1/4 tsp ,
Ginger garlic paste - 1/2 tsp ,
Coriander pwd - 1 tsp,
Cumin pwd - 1 tsp ,
Red chilli pwd -1/4 tsp,
Green chilli -2 deseeded and chopped ,
Coriander leaves - 1 tbsp -chopped ,
Lemon half - Juice ,
Peanuts or cashew nuts - broken -10 ,
Oil -  2 tsp .


Ingredients for  dough :
All purpose Flour or maida -2 cups - 400 gms ,
Carom seeds or ajwain seeds -1 tsp 
Baking soda a pinch or 1/4 tsp,
Salt -1/2 tsp ,
Oil or dalda  - 5 or 6  tbsp ,
Water for dough .
Method :
Sieve maida and baking soda . Add   salt and oil  or dalda and mix  . Add water carefully so that the dough is semi  hard and not soft .Knead the dough properly .
 Cover for 15 minutes or 1/2 hour .


Heat pan and add oil .Add cumin seeds .Let it crackle then add turmeric pwd .
Lower the heat and add  ginger garlic paste with 1/4 tsp of water and stir fry for few seconds.
Add coriander and cumin pwd ,red chilli pwd and stir fry for few seconds .
Add peanuts or cashew nuts .
Add the mashed potatoes and salt .
Raise the heat for few minutes and stir the potatoes so that it is evenly coated and slightly roasted  .
Sprinkle coriander leaves .
Close the heat .Add 1/2 lemon juice and taste salt .
Leave it to cool .
Filling :  
Take dough and  make a log and divide into  7  equal  size dumplings  .
Dust it with flour and  with a rolling pin make thin oval shapes sheets from each dumpling .
Cut  the center of the sheet .You will have 2 sheets now .
Paste water at the edge of each sheet and fold  in from one side  and make a cone .Fill the cone with potato mixture and then  fold in the open side , close  and press it .
You will make 14 samosa from 7 seven dumplings 
Fry in hot oil in  low heat .
Enjoy with tomato ketchup and green chutni !
