Cherry coulis ( syrup )

Ingredients :
Red cherry - 300 gms ( stones removed and cut into halves ),
Orange juice - 1/4 cup,
Lemon juice - 1/4 cup,
Sugar - 1/2 cup,
Vanilla essence - 1 tsp.


Method :
Put sugar, orange juice ,lemon juice and vanilla essence into a saucepan and bring to a boil.

Raise the heat and boil for 5 minutes till the liquid is reduced to half .
Keep stirring regularly.
Lower the heat and add the halved cherries and let it simmer for 5 minutes till the cherries are soft .
Keep stirring so that it does not stick to the bottom.
Remove from heat and then sieve through a strainer .
Press with a heavy spoon and take out all the juice .
Let the juice cool .
Transfer to a clean jar or bottle.
This is an excellent syrup for icecream, pancakes, cheese cake and fruit salads.
Keep in the fridge .
You can make cherry coulis without the lemon juice or orange juice .
