Ingredients :
Lady finger biscuits - 1 packet and few more ( depends on your dish size ),Mascarpone cheese - 450 gms ( can use 500 gms ),
Egg - 4 - separated ,
Sugar - 4 tbsp ( keep aside 2 pinches of sugar for the egg white ),
Rum - 30 ml ,
Vanilla essence - 1tsp ,
Strong instant coffee -- 2 cups ,
Cocoa pwd - to coat ( approx 4 tbsp or more ).
Method :
Take a dish and lay out the biscuits first. so that you have an idea the amount of biscuits which you will need .You have to make 2 layers .
Make a strong coffee and keep it aside so that it is luke warm when the biscuits are dipped in it .
Separate the eggs .
Beat the egg yolk with a beater for few seconds and then add the sugar and beat till light and fluffy .
Add vanilla essence and 30 ml of rum .( you can make it without the rum )
Beat for a second .
In a separate bowl take out the mascarpone cheese and beat for few seconds till light and creamy .
Add the egg yolk mixture to it and beat for few seconds till incorporated .In between the mixing and beating always scrap the sides so that it mixes with the batter .
Keep the bowl in the fridge while you beat the egg whites .
Beat the egg whites till frothy and then add 2 pinches of sugar .
Beat the egg whites till soft peaks form .
Take out the mascarpone cheese egg yolk mixture from the fridge and gradually add the egg white to the cheese mixture in stages .Dont mix all the egg whites in one go .
The mixing has to be very gentle .( fold in )
Keep the bowl in the fridge once more as you layer the biscuits .
Take your dish and dip one side of the biscuit in the luke warm coffee and place it in the dish .
Once the biscuits are layered ,take out bowl from the fridge and divide the mixture into 2 equal part by just making a thin line by your wooden spoon .
Spoon half of the cheese mixture onto the biscuits and gently spread it all over covering the biscuits completely .
Take a tea strainer and put few tbsp of cocoa pwd and gently dab the cocoa pwd all over the cheese mixture .
Dip one side of the biscuit in coffee and repeat the process again ,layering the biscuits on top of the cocoa pwd .
Spoon the rest of the cream cheese over the biscuits and spread it evenly .
Use a butter knife to smoothen the cheese layer .
Cover with a foil and keep in the fridge to set for minimum 2 hours .
When you plan to serve , sprinkle cocoa pwd all over the cheese mix again .You can do this step in advance , cover and keep in the fridge to cool .
