Pound Cake

 
 Ingredients :
Cake flour -   1 and 1/2 cup or 150 gms ( sifted ),

If cake flour is not available you can make it at home  -  (for 1 cup or 100gms of cake flour  mix 3/4 cup or 85 gms of all purpose flour with 15 gms or  2 tbsp of corn starch )
Make sure to sift before weighing .Just double the amount and use 150 gms for the recipe and keep the rest in a container .

Egg - 3 - whisked - ( room temperature ),
Vanilla essence - 1and 1/2 tsp ,
Milk - 3 tbsp ( room temperature ),
Baking pwd - 1 tsp ,
Granulated sugar - 3/4 cup or 150 gms ( my sugar crystals are big so i grind it in the grinder ),
Butter (salted ) - 1/2 cup  and 1/3 cup or 185 gms  - cubed ( room temperature ).

Method :
Pre heat oven to 177 C .
Take a 9 x 5 x 3 inch loaf pan and brush it with butter .
Line butter paper  in the bottom and grease that too . Grease a sheet of foil  for covering the pan if you see the top of the cake browning .
In a medium bowl  whisk together egg ,vanilla essence and milk .

In another bowl place the dry ingredients flour ,baking pwd and sugar  and with a blender  mix in a slow speed for 30 seconds to a minute .
Add the butter  and half of the egg mixture .
Mix in low speed till the ingredients are moistened .
Increase the mixer to medium and beat for 1 minute .
Scrap down the sides .
Gradually add the egg mixture in two additions beating for 30 seconds in medium speed .
Each addition to incorporate the egg and strengthen the cakes structure .
Pour the batter into the greased pan and smoothen  the top with a knife or a spatula .
Tap the pan a few times on the counter so that the batter is evenly set .
Bake for 50 to 55 minutes .
If the cake is browning too much, as it bakes cover the top with a lightly buttered  foil  after 30 minutes .
Check with a knife if done and it comes out clean .
Remove from oven and leave it on the wire rack  for 10 minutes .
After 10 minutes scrap the sides with a knife so that it will be easy to remove from the pan .
Put a plate on top of the cake and turn it upside down .
Put the plate down and gently remove the pan from the cake .
Remove the greased paper and turn the cake on to a greased wire rack to cool for an hour .
Pound cake can be kept for 1 week if covered and kept in the fridge .
Cake is soft and delicate when out of the oven .Let it cool then make slices .
 Enjoy the cake with icecream or hot cup of tea !
