Chocolate cupcakes

Ingredients:
Unsweetened cocoa pwd - 1/2 cup or 50 gms ( sieved ),
Boiling hot water - 240 ml or 1/2 cup ,
All purpose flour - 175 gms or 1 and 1/3 cup ( sieved ),
Baking pwd - 2 tsp ,
Butter salted - 1/2 cup or 113 gms ( room temperature ),
Granulated sugar  - 1 cup or 200 gms ( powdered )
Egg -2 ,
Vanilla essence - 2 tsp .

Method :
Pre heat oven to 350 or 180 C
Sieve the cocoa pwd .
Boil 1 cup of water and mix in the cocoa pwd .
Stir till the cocoa pwd is dissolved and leave it to cool  to room temperature.
In another bowl sieve together the flour and baking pwd .
Take a bowl and beat in the butter till light and pale .
Add in the powdered sugar and beat till light and smooth .
Add in the eggs one at a time and keep in beating until smooth .
Stop the beater for a second and scrap down the sides of the bowl .

Beat in the vanilla essence .
Gradually add the flour  and beat only till incorporated .

Than add the cocoa mixture and stir until smooth .
Fill the muffin paper cups till 2/3 with batter .

Bake 16 to 20 minutes .
Always check 2 minutes before the desired baking time .
Insert a tooth pick or knife to check if the cupcakes are ready .
If a crumb sticks to your knife than the cupcakes are ready . It will cook as it cools down .
Remove from oven and take out the cupcakes to cool  on a wire rack .
Leave it to cool on wire rack for 1/2 hour .
Enjoy these cupcakes with chocolate glaze on top .These cupcakes are a little different than other cupcakes as they are very soft and moist inside .
Makes 19 cupcakes.

  1. These look delicious! Btw, why is the last cupcake in the main photo so glossy and looks like it is covered in melted chocolate but the others are different looking?

    1. Yes they are really soft and delicious .I had made it for home use and it is really hot .I did`nt feel like frosting or icing the cupcakes .Had some chocolate ganache in the fridge and just spooned one of them .Chocolate eaten in any way is always delicious :)
