Ingredients:
Ripe Banana - 1 ( chopped and minced ),
Unsweetened cocoa pwd - 1/2 cup or 35 gms,
All purpose flour - 1cup or 130 gms ( sieved ),
Granulated sugar - 200 gms ( powdered ),
Baking pwd - 3/4 tsp,
Baking soda - 3/4 tsp,
Salt - 1/4 tsp,
Egg - 1,
Water - 120 ml ( room temperature ),
Canola or any vegetable oil ( which is light and does not have any strong flavour )- 1/4 cup or 60 ml ,
Milk - 1/4 cup ( room temperature ),
Vanilla essence - 3/4 tsp.
Method :
Pre heat oven to 180 C .
In a large bowl whisk together the dry ingredients flour, sugar ,salt ,baking pwd and baking soda.
Mix with a whisk .
In another bowl put banana and mash it . Add in the egg and beat with a whisk .
Pour in milk,vanilla essence ,water and oil. Mix.
Mix with a whisk till well combined.
The batter is thin .
Fill 2/3 of paper cups with the batter .
Bake for 20 minutes.
Put the tray on a wire rack and after one minute remove the cupcakes from the tray to cool on wire rack.
Makes 14 cupcakes.
Chocolate fudge frosting :
Un sweetened chocolate - 90 gms,
Butter - 113 gms ( melted ),
Icing sugar - 1 cup ,
Vanilla essence - 1 tsp.
Melt the chocolate in a heat proof dish over a saucepan of simmering hot water .
As chocolate melts remove the dish and leave it to cool.
In a bowl beat butter till smooth and creamy ( 1 minute ).
Add sugar and beat until light and fluffy ( 2 minutes ).
Beat in the vanilla essence .
Add the melted cold chocolate and beat on low speed until well incorporated.
Increase speed to medium high ( 2 to 3 minutes ).
Spoon the frosting in piping bag and decorate the top of your cupcake.
