Mocha muffins

 Ingredients :
All purpose flour - 1 cup or 130 gms( sieved ),
Whole wheat flour - 3/4 cup or 95 gms ( sieved ),
Unsweetened cocoa pwd - 1/4 cup or 25 gms,
Light brown sugar - 1 cup or 205 gms,
Baking pwd - 1/2 tsp,
Baking soda - 1 tsp,
Walnuts - 1/4 cup 120 gms ( coarsely chopped ),

Semi sweet milk chips or chocolate chips -1 cup or 240 ml.
Eggs - 2,
Butter milk - 1/2 cup or 120 ml -  ( You can make your own butter milk - take 120 ml milk and add 1/2 tbsp of white vinegar  and leave it for 10 minutes ).
Canola or any light vegetable oil without a strong flavour - 1/2 cup or 120 ml,
Black coffee - 1/4 cup or  60 ml ( room temperature ),
Vanilla essence - 1 tsp.


Method:
Pre heat oven to 375 F or 190 C
Take your muffin tray and line them with paper cups or grease them.
The tray has to be kept in the center rack of the oven.


In a large bowl whisk  2 eggs  for 30 seconds then add butter milk, vinegar, oil, black coffee and vanilla essence . Whisk again for few seconds.

In another large bowl whisk together flours ,baking pwd ,baking soda, brown sugar ,chopped walnuts and chocolate chips or milk chips.
With a spatula fold  together  the wet ingredients into the dry ingredients and stir only until  the incorporated  are combined.
 ( do not over mix the batter otherwise the muffins will be tough.
Evenly fill the muffin cups with the batter with 2 spoons or a icecream scooper .
Place it in the oven and let it bake for 18 to 23 minutes. Insert a toothpick  to check it should come out clean.
Place the muffin tray on the rack for 10 minutes than take out from the tray.
This is a healthy muffin made with oil , both wheat and  plain flour. 
It tastes delicious and is very nutty .

  1. These look great! I love the rough texture! Biting into those walnut chunks must be great. I am really tempted to make this one.. :) ... Yknow what.. you should try using some food color on the walnuts and color them gold, then this muffin can be called a gold ore muffin!!

    1. Good idea :)I will have to hunt for the golden food colour!
      I made cherry muffins and it has turned out very well.Your link to home made pitter has worked excellent. It was easy to pit out whole cherries and I am going to post it my blog for my viewers.Thanks :)
