Sugar cookies


Ingredients:
All purpose flour or maida - 3 cups or 390 gms,
Baking soda- 1tsp,
Salted butter- 1 cup or 227 gms,
White granulated sugar- 1 cup or 200 gms,
Egg- 2 ,
Vanilla essence- 2 tsp
Granulated sugar- to sprinkle on top of each cookie before baking.

 Method:
Pre heat oven to 350 F or 177 C.
Line baking tray with butter paper.
In a separate bowl whisk together flour and baking soda.
In a bowl of your mixer beat the butter for few seconds,then add the sugar  and beat until light and fluffy ( 3 minutes ).
Add the eggs and vanilla essence and beat until combined.
Add the flour mixture and beat until you have a smooth dough.
Gather the dough and divide in half.
 Flatten into small disc and wrap each with cling film and keep in the fridge to chill and firm enough to roll( 1 hour to overnight )
I had to keep the dough overnight as the dough was very soft.( if kept over night ,let the dough rest  for 15 to 20 minutes at room temperature )
Remove one half of chilled dough from the fridge and on a lightly floured surface or on a plastic or cling film roll out the dough ( Since it is not so cold yet ,I cover the dough with cling film and then use my rolling pin to roll the dough.
Roll out the dough to a thickness of 1/4 inch .
Cut out the desired shape using a lightly floured cookie cutter.
Sprinkle some granulated sugar on each cookie.
Place the baking tray with the unbaked cookies in the fridge for 15 minutes to chill.
Take the other dough out from the fridge and roll like wise.
Bake cookies for  15 to 20 minutes depending on the size or until the edges are just starting to brown.
I like my cookies to be more crisp and brown so I baked them a few minutes longer.
Remove from oven and let cookies cool on baking sheet for  few  minutes before transferring  them 
to wire rack to cool completely.
Makes -30 cookies
