These cookies are melt in the mouth cookies!
Very soft and crumbly,due to the combination of icing sugar with butter and store bought custard powder!
Very easy to make and bake!
Ingredients:
Butter-220 gms( 120 gms amul light butter and 100 gms normal butter)can use any-had these in the fridge,
Icing sugar (sieved)-150 gms,
Plain flour or maida(sieved)-250 gms,
Custard pwd-155 gms,
Vanilla essence-1 tsp,
Egg-1.
Method:
Egg and butter should be at room temperature.
Line 2 trays with butter paper.
Mix flour and custard powder in a bowl with a whisk.
You can mix all the ingredients with a whisk in a bowl,but I have used a beater to make the dough.
Take a bowl and beat butter for 30 seconds.
Add icing sugar and beat for another 30 seconds.
Scrap the sides with a wooden spoon.
Add egg and beat for 30 seconds and then add vanilla essence and beat for another 10 seconds.
Add the flour in two batches and run the beater only till combined.
Remove the beater and gather the dough in the center.
Pre heat oven to 180 C.
Divide the dough into 30 size small balls and flatten them in between your palm.
Place them on the baking tray leaving an inch space between two cookies.
Using a fork press on top to make the design.
Put the tray in the fridge for 5 minutes.while the oven is pre- heating.
Bake the cookies for 18 to 20 minutes.
The top does not brown,so it a little tricky to know if the cookies are baked or not.
After 18 minutes,take out and check the bottom of one cookie and you will get a fair idea how much time is required.
If the bottom is brown colour,then the cookies are baked.
Or bake for few minutes more.
Take out the tray once the cookies are done on a wire rack to cool for 5 minutes.
Remove the tray and slide the butter paper with the cookies to cool for another 5 minutes and then remove the cookies from the butter paper and cool completely on wire rack.
Makes 30 cookies.
Best eaten fresh but can be kept in a container.
