This is tunu`s recipe
Ingredients for dough :
All purpose flour or maida - 500 gms ,
Butter - 4 tbsp ,
Milk - 1/2 cup ,
Salt and pepper to taste .
Ingredients for filling :
Cottage cheese or paneer - 200 gms ( small cubes ),
Spinach - 100 gms ( blanched and chopped ),
Green bell pepper - 1 ( chopped ),
Salt ans pepper to taste ,
Olive oil - 1tsp ,
Ingredients for topping :
Egg -2 ( beaten ),
Cream - 200 gm ,
Cheese - 50 gm ( grated ,keep 1 tbsp of cheese aside ),
Pepper 1/4 tsp.
Method :
Sieve flour in a bowl and add salt and pepper .Pour the melted butter and mix .Make dough by adding milk to the flour .Cover and keep aside .
Heat a pan add 1 tsp of oil .Saute bell pepper ,paneer cubes and spinach in high heat for 1/2 minute .Sprinkle salt and pepper and keep aside .
Take a bowl and brake 2 eggs in it .beat for 1/2 second .then add cream and cheese . Keep aside 1 tbsp of cheese to sprinkle on top .Mix the cream egg mixture gently with a spoon .Add pepper to it .
Pre heat oven to 180 C .
Grease the baking pie dish.
Take the prepared dough and roll it on your work station .
My pie dish size is 8x8 .
Roll the dough 2 inches bigger than your pie dish .
Place the rolled dough on your pie dish and press the edges with the tip of your finger .
Cut out extra dough if hanging .
With a fork make pricks on the dough surface .
Spoon the paneer spinach mixture in the pie dish and top it with the cream egg mixture .
Sprinkle fresh pepper and some grated cheese on top.
Transfer the dish to the oven and let it bake for 45 minutes or till a brown crust forms on top .
When ready take out and leave it to cool for 5 minutes on wire rack .
Cut into pieces and serve while still hot .
Ingredients for paneer marination :
Paneer or cottage cheese -200 gms ( cubed ),
Coriander pwd -1/2 tsp ,
Red chilli pwd -1/4 tsp
Thick curd -1 tbsp,
Salt 1/4 tsp ,
Ginger 1 tsp ( grated and extract the juice ),
Oil 1 tsp .
Ingredients for gravy :
Tomato -3 medium size ( pureed ),
Green chilli -1,
Green bell pepper - half ( chopped into small pieces)- optional,
Cumin seeds -1/2 tsp ,
Bay leaves -1 ,
Ginger garlic paste -1/2 tsp ,
Coriander pwd - 1 tsp ,
Red chilli pwd -1/2 tsp ,
Turmeric pwd -1/4 tsp ,
Cornflour -1 tsp ( mix with 2 tbsp of water ),
Sugar -1/2 tsp ,
Garam masala -1/2 tsp ,
Oil -1 tbsp ,
Salt to taste ,
Coriander leaves -1 tbsp.
Method :
Marinate the paneer pieces and keep in the fridge for an hour .
Heat a kadhai and put 1 tsp of oil and fry the paneer pieces for a minutes tossing both the sides .
Take out and keep aside .
Puree tomatoes and green chilli in a blender .
Add 1 tbsp oil and put cumin seeds and bay leaves in the pan .As cumin brown ups , add the ginger garlic paste ,coriander pwd ,red chilli pwd and turmeric pwd .Add few spoons of water so that spices dont burn .After a minute add the capsicum , tomato puree and sugar .
Cover and let the sauce cook for 3 to 4 minutes on low to medium heat.Add cornstarch mixed with 2 tbsp of water .The sauce will thicken within few seconds .Let it cook for a minutes then add the paneer tikas , salt and garam masala.
Cover for 5 minutes and let it cook on low heat .
Close the gas .
Taste salt .
Sprinkle coriander leaves .
Enjoy with hot rotis or paratha !
Serves 4
Ingredients :
Paneer or cottage cheese -200 gms ( cubed ),
Green bell pepper -1 big ( cubed ),
Ginger -1 inch ( grated),
Tomato -3 medium ( chopped and pureed )
Green chilli -1( chopped ),
Cumin seeds -1 tsp,
Coriander pwd -1 tbsp ,
Turmeric pwd -1/4 tsp,
Methi leaves or dry methi leaves -2 tbsp ( i have used dry methi leaves ),
Red chilli pwd -1/4 tsp,
Oil -2 tsp ,
Salt to taste .
Method :
Soak the dry methi leaves in 2 tbsp of water for 5 minutes then squeeze out the water from the leaves
and keep in a bowl .If you are using fresh leaves ,blanch it and then squeeze out the water .
Chop the tomatoes and run in the grinder with green chilli and ginger .Take out and keep in the bowl .
Heat 1 tsp oil in pan and saute the cubed bell peppers in high heat for half a minute and keep aside .In the same pan ,saute paneer for few seconds in high heat and keep aside.
Put 1 tsp oil in pan and then add cumin seeds ,let it crackle .Lower the heat and then add the tomato puree mixture .
Raise the heat for a minute and then add coriander pwd ,turmeric pwd , red chilli pwd and dry methi leaves and salt .Let it cook till the sauce is half and then add the bell peppers and paneer .
Lower the heat and put a lid and let it cook for 5 minutes .
Close the gas .
Kadhai Paneer is ready .
Enjoy with hot roti and bondi raitha .
Ingredients :
Green Peas- 300 gms ,
Cottage cheese -200 gms ,
Onion -1 medium size -4 tbsp or 50 gms ( finely chopped )
ginger garlic paste - 2 tsp ,
Coriander pwd -1 tsp ,
Cumin pwd - 1 tsp ,
Turmeric pwd - 1/2 tsp,
Red chilli pwd -1/4 tsp ,
Tomatoes -2 medium or 100 gms ( finely chopped ) ,
Tomato puree -1 tbsp ,
Salt to taste ,
Oil -3 tbsp.
Method:
If you are using frozen peas ,wash it with water .Dont microwave to defrost it.
Cut the cottage cheese to 1 and 1/2 inch size .
Take a pan and put oil in it.As oil heats up add onions .Stir fry ,till it is light pink .
Add ginger garlic paste with little water .Fry for a minute ,lower the heat and then add coriander pwd,turmeric pwd ,cumin pwd ,red chilli pwd and a few tbsp of water .Raise the heat and stir fry the masala till oil leaves side .Add the chopped tomatoes and tomato puree .fry till the tomatoes are soft and oil leaves side .
Add peas to the pan and mix it with the sauce ,then add the cheese pieces .mix and add salt .
Stir fry for few mintute and then transfer it to the cooker.
Cooking time for cooker is 1 whisle in high heat .
If you plan to cook in the pan then add 1/2 cup of water and let it simmer for 10 minutes till peas are tender .
Cottage cheese takes only 5 minutes to cook .
Mutter paneer is ready
Ingredients -For Koftas:
Paneer or Cottage cheese -250 gms,
Maida -( refined flour ) -3 tbsp,
Baking pwd -1/2 tsp,
Green chilli-2,
Corriander pwd-1 tbsp,
Chilli pwd -1/4,
Put all the above ingredients in a jar and run the mixer at speed1 for 30 seconds and make a thick dough.
Remove from mixer and shape dough into small koftas or balls of 1 inch size and deep fry them on medium heat.
Masala For Curry:
Tomato - 4 large (pureed),
Khus-khus pwd or Poppy seeds pwd-2 tsp ,
Garlic ginger paste - 2 tsp,
Onion -1 (medium size )paste or finely chopped,
Curd -1/3 cup,
Red chilli pwd -1 tsp,
Cumin pwd -1 tsp,
Garm masala -1/2 tsp,
Cream -100 gms,
Oil -3 tbsp,
Salt to taste.
Method :
Heat oil in kadhai or deep pan,fry onions ,ginger- garlic paste.Add all above ingredients except curd and cream.
Lower the heat and cover with a lid, till oil seperates.
Beat the curd.
Remove the pan from heat and then pour the beaten curd and then again put the pan on low heat.
Cook for a minute.
Add koftas and cream and serve.
