Ingredients:
Eggplant -1 ( medium ,cut into 2 cms pieces ),
Okra or bhindi -300 gms ( small pieces ),
Onion -1 (medium ,chopped ),
Cumin pwd -1 tsp,
Dried red chilli -1 ,
Sugar -1/4 tsp,
Salt and pepper to taste ,
Turmeric -1/4 tsp,
Oil -2 tsp.
Method :
Cut eggplants into small pieces and rub salt and pepper and keep aside for 10 minutes .
Heat 1 tsp oil and stir fry the eggplant for 3 or 4 minutes till soft .You can cover for a minute .
Take out and keep aside .
In the same pan add 1 tsp oil .Stir fry the onions in high heat for 5 minutes.
Add dried red chilli ,turmeric pwd and cumin pwd . Stir fry for a minute ,then add bhindi or cut okra .
Cook for a minute and then cover for a minute .Raise the heat and stir fry the okras for a minute till the stickiness is not there . Add the eggplant ,sugar ,salt and some coriander leaves . Mix and close the gas .
Eggplant okra is ready .
Can enjoy with roti or rice .

Ingredients :
Bhindi or Okra -300 gm ( chopped into small pieces ),
Green bell pepper -1 ( chopped into medium size chunks ),
Onion -1 medium size ( chopped small ),
Tomato -1 chopped ,
Turmeric -1/4 tsp ,
Cumin seeds -1 tsp ,
Coriander seeds -2 tsp ( slightly crushed ),run the coriander seeds in a blender for a second .
Green chilli - 1 ( chopped ),
Ginger garlic paste -1 tsp ,
Salt to taste ,
Oil -1 tsp ( for bhindi or okra )
Oil -2 tsp for curry .
Method :
Heat 1 tsp oil in kadhai or skillet .
As oil heats up ,lower the heat,and add the cut bhindis , stir once and cover for 5 minutes .
Stir twice in between the 5 minutes.
Raise the heat to medium and fry till the stickiness of the bhindi disappears ( 2 to 3 minutes ). Take out the bhindi from the kadhai and keep aside .
In the same kadhai put 2 tsp oil , lower the heat and then add cumin seeds and crushed coriander seeds .
Fry them for few seconds in low heat ( dont let it burn ),
Add chopped onions and saute in medium heat , add a pinch of salt .
Dont brown the onions , add turmeric pwd .
After few seconds add ginger garlic paste .Let it fry for a minute till the raw flavour of the garlic is gone .
Add sliced green chilli and then add the chopped tomato .
Lower the gas and cover for 2 minutes till the tomatoes are soft .
Raise the heat and add the bell peppers . stir for few seconds ,then add the cooked bhindi and some salt . Mix and then lower the heat and cover for 4 minutes .
Close the gas after 4 minutes .Uncover and add garam masala and chopped coriander leaves .
Close with the lid and let it stay for a minute in the kadhai .
Kadhai bhindi is ready !
Taste salt .

Ingredients :
Bhindi or okra -250 gms ,( Cut into 2 inches and then slit into two )
Tomato - 1 chopped ,
Onion -1 medium size - chopped ,
Amchoor or mango pwd - 1/2 ( more if you like it tangy ),
Coriander pwd -1 tsp ,
Cumin pwd -1 tsp ,
Haldi or turmeric pwd - 1/4 tsp ,
Red chilli pwd -1/2 tsp ,
Panchforan - 1 tsp,
Green chilli -2 slit ,
Coriander leaves chopped -1 tbsp,
Salt to taste ,
Oil - 1 tbsp
Method :
Cut bhindi into 2 inches and then slit each from the centre .
Heat oil in pan and add panchforan .As the spices crackle add onions and turmeric pwd and red chilli pwd .Saute for 30 seconds on medium heat and then add the cut bhindi .Stir and then lower the heat .
Add ,mango pwd ,cumin pwd, coriander pwd ,salt and tomatoes and then cover for 5 minutes .Dont mix now .
Uncover after 5 minutes and then stir the vegetables on heat till the bhindi is not sticky and a little brown. It will take 3 or 4 minutes and then close the gas . Taste salt .

Ingredients :
Bhindi or Okra -350 gms ,
Methi or Fenugreek seeds -!/2 tsp,
Dried red chilli -1 (broken into half ),
Turmeric pwd -1/2 tsp,
Mustard oil -1 tsp ( any oil of your choice ),
Oil -1 tbsp,
Salt to taste.
Method :
Wash the Bhindi or Okra and keep it in a strainer .Leave it to dry for sometime or spread it on a cloth.
Bhindi has to be dry otherwise the water will make it more sticky while stir frying .
Discard the top or hard part of Bhindi or Okra and cut the Bhindis into 1/4 0r 1/2 inch sizes.
Heat oil in kadhai or pan.
when oil is hot ,lower the heat add dried red chilli and methi seeds .When the colour of methi changes add the cut Bhindis. Raise the heat and stir fry it in high heat. Lower the heat and add turmeric pwd and salt. Raise the heat and stir fry the Bhindis for 4 or 5 minute.The stickiness
will not be there once the Bhindi is cooked. Slightly brown the Bhindis and close the gas.
Best when eaten hot .
