Green peas with scallions, garlic and ginger

This is my mummy`s recipe
Ingredients:
Fresh green peas - 500 gms ,
Scallions or green onions - 3 or 4 ( chopped ),
Garlic  - 6 small ( chopped ),
Ginger -2 inch (chopped ),
Green chilli -2 ( chopped ),
Cumin seeds - 1 tsp ,
Coriander leaves -2 tbsp ( chopped ),
Turmeric pwd -1/4 tsp ,
Water- 4 tbsp,
Salt to taste ,
Oil - 1 tsp .
Method :
Heat pan and put 1 tsp of oil . As oil heats up add cumin seeds . 
As cumin changes colour, add chopped garlic and ginger .
After 1/2 second , add chopped green chilli ,chopped and diced scallions or green onions ,green peas ,salt  ,turmeric pwd and 4 tbsp of water .
 Mix and lower the heat and put a lid on .
Let it simmer and cook for 10 minutes or less than that ( low heat ).
As the peas are fresh and tender it will be not take time to cook .
Open and check if the peas are tender and then raise the heat for 1/2 second to dry the peas if need be.
Close gas .
Sprinkle fresh coriander leaves .
It is  very simple and tasty side dish .
You can enjoy the peas with rice ,roti or paratha .
My mother used to serve this dish with boiled eggs .

Mushroom with peas

This is a very easy and and tasty dish where you dont have to spend to much of time frying and sauting.
Ingredients:
Mushroom -2 cups  ( sliced ),
Frozen peas -1 cup ,
Tomatoes - 2 medium ( chopped ),
Ginger garlic paste -1 tsp ,
Cumin seeds -1 tsp ,
Coriander pwd -1 and 1/2 tsp,
Turmeric pwd -1/4 tsp,
Red chilli pwd -1/4 tsp ,
Dry methi leaves -1 tbsp ( crush it with hand ),
Green chilli -( slit from the middle ),
Oil -1 tbsp,
Lemon -1 tsp ,
Salt to taste.
Coriander leaves for garnishing .
Method :
Heat oil in pan ,add 1 tbsp of oil. Put cumin seeds and let it change its colour.
Add the chopped tomatoes ,turmeric pwd ,ginger garlic paste ,coriander pwd ,cumin pwd ,red chilli pwd and green chilli .
Stir and then lower the heat and put on a lid .Let it simmer for 4 minutes .The tomatoes will be soft and tender and the sauce will be reduced to half .
Raise the heat to medium and then add the mushroom , peas and methi leaves  . Add salt .
Stir and then lower the heat and put on the lid .let it cook for 8 to 10 minutes .( Check if peas is tender ).
If peas is cooked, close the gas .
Add 1 tsp of lemon juice and sprinkle coriander leaves.
Taste salt .
Enjoy this vegetable with hot roti .

Mutter Makhana ( Green Peas with lotus Seeds)

Ingredients :
Green peas  -300 gms ,
Makhana -50 gms ,
Onion - 3 - ( paste ),
Ginger -garlic paste - 2 tsp ,
Red chilli pwd - 1/2 tsp ,
Turmeric pwd - 1/2 tsp ,
Tomato puree -3 tbsp ,
Oil -1 tbsp,
Ghee - 1 tbsp for makhana ,
Salt to taste .
Method :
Heat ghee and saute the makhana on high heat till they are slightly roasted .
Keep aside .


Heat oil in pan  and add onion paste .fry till light pink  ,then add ginger garlic paste .fry for 2  minutes 
Add red chilli pwd , haldi pwd  and 2 tbsp of water . Fry till oil leaves side .Add tomato puree .Let it cook for few minutes till oil leave side .
Add makhana and stir , then add peas and salt .
Stir fry till the sauce is evenly coated .
Add 1 and half cup of water .Mix and let the gravy come to a boiling point.
Cover and let it simmer for 10 minutes .
Mutter makhana is ready .
Taste the  salt .
Add cream and chopped  coriander leaves before serving .

Mutter Paneer ( Green Peas With Cottage Cheese )


Ingredients :
Green Peas- 300 gms ,
Cottage cheese -200 gms ,
Onion -1 medium size -4 tbsp or 50 gms ( finely chopped )  
ginger garlic paste - 2 tsp ,
Coriander pwd -1 tsp ,
Cumin pwd - 1 tsp ,
Turmeric pwd - 1/2 tsp,
Red chilli pwd -1/4 tsp ,
Tomatoes -2 medium or 100 gms ( finely chopped ) ,
Tomato puree -1 tbsp ,
Salt to taste ,
Oil -3 tbsp.


Method:
If you are using frozen peas ,wash it with water .Dont microwave to defrost it.
Cut the cottage cheese to 1 and 1/2 inch size .
Take a pan and put oil in it.As oil heats up add  onions .Stir fry ,till it is light pink .
Add ginger garlic paste with little water .Fry for a minute ,lower the heat and then add coriander pwd,turmeric pwd ,cumin pwd ,red chilli pwd and a few tbsp of water .Raise the heat and stir fry the masala till oil leaves side .Add the chopped tomatoes and tomato puree .fry till the tomatoes are soft and oil  leaves side .
Add peas to the pan and  mix it with the sauce ,then add the cheese pieces .mix and add salt .
Stir fry for few mintute and then transfer it to the cooker.
Cooking time for cooker is 1 whisle in high heat .
If you plan to cook in the pan then add 1/2 cup of water and let it simmer for 10 minutes till peas are tender .
Cottage cheese takes only 5 minutes to cook .
Mutter paneer is ready
