Mutton mughlai masala

Ingredients :
Mutton or lamb pieces - 1/2 kg ,
Onion - 3 onions (cubed  ),
Dried red chilli - 3 ( soaked in vinegar ) ,
Green chilli -1 ,
Big cardamom - 3 ,
Small cardamom - 3 ,
Cinnamon - 1 stick- 2 cm ,
Cloves - 4 ,
Garlic cloves - 4 ( chopped ),
Ginger - 1 tsp chopped ,
Coriander pwd  - 4 tsp ,
Cumin pwd  - 2 tsp ,
Pepper corn - 8 ,
Turmeric pwd - 1/2 tsp ,
Curd - 1 cup ( beaten ),
Coriander leaves - 5 tsp ,
Mint leaves - 2 tsp ,
Ghee 4 tbsp ,
Green coriander leaves for garnishing .
Method :
Soak dried red chilli ( brake into halves) in2 tbsp of  vinegar for ten minutes .
Grind all the spices , ginger ,garlic ,green chilli  , soaked red chilli ,coriander leaves ,mint leaves in a grinder for 1/2 minute and then add all the cubed onion . Run blender till masala is smooth.
Heat 4 tbsp ghee in pan .As ghee heats up add mutton pieces and fry till the  colour changes  (  takes a minute ) in high heat .Take out and keep aside .
In the same ghee add turmeric pwd and  the ground masala and fry till oil leaves side ( medium heat )
Lower the heat and add curd .
Simmer for few seconds till curd blends with the masala .
Raise the heat and then add mutton and salt ,3/4 cup of water .
As the sauce comes to a boiling point ,transfer it to a cooker .
Cook in pressure cooker till done ( 1 whisle in high heat and 14 minutes in low heat ).
Taste salt when cooker is opened .
Mutton mughlai masala is ready .
Enjoy with hot naan ,roti or  pulao .
