Balushahi

This is for you Tutu :)
Ingredients:
All purpose flour or maida - 300 gms ,
Sugar 250 gms ,
Dalda - 75 gms ,
Baking soda -1/4 tsp,
Curd -50 gms ,
Water for sugar syrup -1 cup ,
Small cardamom -4 ( powdered ),
Pistachio- a handful ( shelled and slivered)
Method:
Sieve the flour with baking soda and keep in a bowl .
Pour beaten  curd and mix.
Pour dalda and mix the dough.The state of dough will be crumbly .Add very little water and make a dough .Dont punch too much air as the dough edges has to be rough not smooth .
Cover with a wet cloth and leave for 20 minutes.
We have to make sugar syrup with one thread consistency for balushahi.
Pour sugar and water in pan and let it boil in medium heat till it reaches one thread consistency ( 7 to 10 minutes).Add few drops of lime juice so that the sugar does not cristalize.If the sugar becomes thick add little water and boil .Keep the sugar syrup aside .
Take the maida dough and make a log and divide into small dumplings .Make a ball and flatten
 each dumpling like a tikka and press in the middle with your thumb.Cover with a wet cloth.
Heat dalda in karahi and when it is slightly warm add the flatten dumplings in it .The heat has to be low.
After a minute the dumpling will rise and then you turn it with a spoon and let it fry till the colour is light brown.( the heat has to be low through out the frying )
Both sides should be evenly fried .Take out and keep on a tissue so that excess oil is absorbed.Close the gas for 1 minute and then put the next batch of balushahis in the karahi .
Then light the gas ,and let it fry in low heat .
Put all the fried balushahis in a bowl  or deep plate and pour the sugar syrup over it .Let the balushahis stay in sugar syrup for sometime .
Put the balushahis  in the serving plate and sprinkle cardamom pwd and slivered pistachios .
Enjoy hot or cold balushahis any time of the day .
