Chicken Pinwheels

Ingredients for marination:
Chicken breasts - 4 or 1/2 kg ,
Salt to taste ,
Garlic  paste -2 tsp ,
Cumin pwd -2 tsp,
Red chilli pwd -1 tsp ,
Olive oil - 1 tbsp ,
Green coriander leaves - 1/4 cup ( chopped )
Half lemon juice ,
Vinegar - 1 tbsp ,
Black pepper pwd -1/2 tsp.
Ingredients for filling:
Onion -1 medium size  finely chopped ,
Green chilli -1  deseeded and finely chopped ( optional),
Red chilli pwd  -1/4 tsp ,
Green coriander leaves - 1 tbsp finely chopped ),
Garlic cloves -2 chopped ,
Hot and sweet ketchup -1 tsp ,
Salt and pepper very little .


Method :
Place the chicken breasts on the chopping board and slice into two from the center .
Beat the pieces with a meat tenderiser or kitchen hammer with a light hand .


The chicken pieces will flatten  .
Marinate the chicken pieces  with the above ingredients for minimum 1 hour or overnight in a ziplock bag .


When you plan to cook mix  the above filling ingredients  and keep aside in a bowl.


Take out the chicken pieces from the foil and spread it on the board as shown in the picture .
Fill each pieces with the mix and roll it tightly from the short side   till the end .It will take the shape  of a log  .Put the chicken log in the aluminum foil and wrap it like a toffee wrapper .Likewise fill all the pieces and make toffee wraps .Roll the foil three or four times .If you use small wraps water will seep in .
Boil water in a pan .As water boils drop the chicken toffees in boiling water and  cover with a lid. Lower the heat and let it simmer for 20 minutes .
Close the gas and take out the chicken toffees from the water and keep in a plate .
Let it cool for 10 minutes .
Discard the foil and cut the chicken logs from the end in 1/2 inch circular pieces .
Chicken Pinwheels are ready to be served and enjoyed with green chutney or sauce of your choice .
You can try any other fillings of your choice .
