Chilli Chicken ( dry )

Ingredients :
Chicken bone in - 400 gms ( cut into 2 inches ),
Onion - 2 medium size -chopped into small pieces ( can cut into chunks ),
Green chilli -2 or 4 chopped ( can add more if you want it hot ),
Garlic paste - 1 tsp ,
Green capsicum - chunks ( optional ) ,
Oil -2 tbsp .
Ingredients for marination of chicken .
corn flour - 1 tbsp,
vinegar - 1 tbsp ,
Black pepper - 1/ 2 tsp ,
Soya sauce - 1 tbsp ,
salt 1/2 tsp.
Sauce ingredients :
Corn flour - 1 tbsp ,
Vinegar - 1 tbsp ,
Soya sauce - 1 tbsp ,
Sugar - 1/2 tsp ,
black pepper - 1/ 2 tsp,
Salt to taste ,
Water - 1/2 cup.
Mix the sauce ingredients in a bowl or cup .
Method :
Marinate the chicken with cornflour ,vinegar ,soya sauce ,pepper and salt for 4 to 6 hours .keep in the fridge .
Marinate overnight if you are using chicken bone in  .


Heat oil in pan and shallow fry the chicken pieces in batches .Cover for 2 or 3 minutes and turn the sides and cover again for 2 minutes . Uncover and  lightly brown  the pieces in medium heat turning and tossing so that the chicken is lightly browned .It will take only few minutes. dont brown it too much as the chicken will become hard .Keep aside .
In the same oil add garlic paste and stir  fry in medium heat until lightly pink .Add oinions and green chilli and saute in high heat for 1 minute .If you are using capsicum saute it with  the onions now .
Add the stir fried chicken .
lower the heat and add the sauce  .
Raise the heat and the sauce will thicken in seconds .Fold the sauce in the chicken pieces and  stir for 1/2 minute and close the gas .Taste salt .
Enjoy chilli chicken with noodles or fried rice !
