Ingredients :
Chicken -300 gms ( cut into 2 inches pieces )
Garlic paste - 1 tsp ,
Oil for shallow frying - 3 tbsp
Vegies - Capsicum -1 ( finely cut length wise ),
Baby carrot -2 ( cut length wise ),
Green beans - 6 or 4 tbsp ,
Onion -1 medium size- ( quartered ),
Green chilli -1 ( optional ).
Marination of chicken :
Soya sauce - 1 tbsp ,
Vinegar - 1 tbsp ,
Corn flour - 1 tbsp ,
Black pepper pwd - 1/2 tsp ,
Salt to taste 1/2 tsp .
Sauce :
Water -- 300 ml water or 1 and 1/2 cup
Corn flour- 2 tbsp ,
Vinegar - 1 tbsp ,
Soya sauce - 1 tbsp ,
Sugar -1 tsp ,
Salt - 1/2 tsp ,
Black pepper pwd - 1/2 tsp ,
Red chilli sauce - 1 tbsp .
( prepare this mix before cooking starts - mix in a bowl and keep aside )*
Method :
Marinate the chicken pieces with soya sauce ,vinegar ,pepper ,cornflour and salt and leave for 4 hours in the fridge or over night .
Take oil in pan and shallow fry the chicken .Cover for 3 minutes and cook both sides and then raise the heat to medium and brown them. Keep aside .
In the same oil stir fry the vegetables in high heat for a minute and keep aside .
Add 1 tsp oil and put garlic paste . Stir fry on medium heat till light pink . Add all the vegies and chicken pieces .Lower the heat .
* Now add the sauce mix to the pan and raise the heat and stir the chicken and vegetables .
As the sauce starts to boil , it will gradually thicken .keep stirring . As the sauce thickens the sauce will reduce . Let it boil for a minute on low heat .Taste salt and then close the gas .
Chilli chicken in thick sauce can be eaten with noodles and plain rice too .

Made this recipe this evening...it turned out quite well, with delicate flavors..! All three of us enjoyed it :)
