Ingredients:
Mutton chaap or ribs - 500 gms ,
Garlic paste -2 tsp ,
Cumin pwd - 2 tsp ,
Lemon Juice -2 tsp or juice of half lemon ( small size ) ,
Vinegar - 2 tbsp ,
Black pepper - 2 tsp ,
Oil - 1 tbsp ,
Salt to taste .
Method :
Prick the chaap with a fork and add all the above ingredients .
Cover with a cling film and leave it to marinate overnight in the fridge.
There are two ways to follow the process for roasting
First we boil the chaap in the cooker (1 whisle in high heat and 5 mints in slow heat) and then dry it if there is broth and then transfer the contents to the baking tray for roasting .
Or
Directly roast the chaap in the oven.
Parboiling the chaap saves time in roasting and more tender when eaten.
Grease the tray with oil . Spread the parboiled or marinated chaap on the tray.
Pre heat the oven,
Put the tray with the chaap in the oven,
Raise the temperature to 200 C.
After 20 minutes the ribs will be slightly roasted .Flip the chaap so that both sides are roasted .
Can brush some oil if you think the chaap is too dry .
Leave it for 10 minutes more to roast
Approximate time of roasting is 30 minutes
Brown spots will appear . Take out from the oven and serve it on a plate . .
Sprinkle fresh grounded pepper and a few drops of lemon juice.
Enjoy with green salad and mint raita .
