Panchforan ( This is a mix of 5 spices. These measurements will create about 7 tbsp of Panchforan )
ani seed - 3 tbsp,.
mustard seed - 2 tbsp,
carom seed - 1 tbsp,
onion seed - 1 tbsp,
fenugreek seed -1 tsp.
Mix these spices and panchforan spice is ready.
Can be used in any curry or stir -fried veggie.
Potato - 4 ( medium size ),
Panchforan - 1 tsp,
Small dried red chilli -1 ( split into two ) or red chilli pwd -1/4 tsp ,
Turmeric -1/2 tsp,
Corriander pwd - 1 tsp ,
Oil -3 tbsp ,
Salt to taste ,
Corriander leaves -1 tbsp (optional ).
Method -
Wash the potatoes and slice it and then cut length wise .( like finger fries but thinner version )
Heat oil in kadhai or wok or skillet, when oil is heated ,lower the gas and put split red chili and panchforan.
If you are not using whole red chilli dont use the chilli pwd now.

When the spices crackle ,add the potatoes ,haldi pwd ,salt and cover with a lid.
Let the potatoes cook in low heat.
After 5 minutes uncover and turn the potatoes ,and then cover again.
Repeat the procedure again and check . If the potato is 3/4 cooked ,
add corriander pwd and red chilli pwd . If you have used whole red chilli in the start you dont have to put chilli pwd now. cover for 2 minute and then remove the lid .Put the gas on high flame .
Stir fry for few minutes .
Sprinkle corriander leaves .
Spicy potato is ready!
